Peppered Quinoa Recipe
Ingredients:
-1 cup quinoa
-2 cups vegetable/chicken broth
-1 tablespoon garlic powder (or minced)
-1 tablespoon salt
-1/2 tablespoon black pepper
-A handful of diced green, yellow and red peppers
-Half an onion, diced
-2 tablespoons olive oil
-2 fresh basil leaves
-Parmesan cheese
Directions:
In a small saucepan, sauté the onions, peppers and garlic in
the olive oil until golden. Pour in the quinoa, followed by the
broth. Stir in the salt, pepper and basil. Bring to a boil. Once it starts
boiling, lower the heat to a simmer and cover for about 10-15 minutes or until
quinoa has absorbed all the water. Remove from heat, fluff and add the parmesan
cheese to taste.
